What You’ll Learn

پنیر پیتزا (به انگلیسی: Pizza cheese) نوعی پنیر پرورده پاستوریزه است که در تهیه پیتزا به‌کار می‌رود. این گونه پنیر به دو فرم صنعتی و سنتی وجود داشته و برای به‌کارگیری آن، به شکل‌های گوناگونی چون رشته‌ای، ورقه‌ای و ... به‌کار گرفته می‌شود. این پنیر در فرآیند تهیه پیتزا، با ذوب شدن بر روی سطح این غذا، تاثیر کشسان و چسبنده خود را نشان می‌دهد. این پنیر با پنیر موزارلا فرق دارد و از بافتی نرم برخوردار است.

با افزایش تمایل مردم به مصرف غذاهای آماده و در نتیجه مصرف هرچه بیشتر پنیرپیتزا و با توجه به تنوع تولید این محصول و افزایش کارخانجات تولید این نوع پنیر، آگاهی از خصوصیات این فرآورده و آشنایی بیشتر با شرایط تولید و تشخیص کیفیت آن امری ضروری است. در کل، پنیرپیتزا، پنیری است که بافت آن قابل رنده‌شدن و لایه لایه است و از انعقاد آنزیمی شیر تازه پس از کاهش pH به وسیله اسیدسیتریک یا اسیدلاکتیک به دست می‌آید و سپس در آب داغ، کشش لخته انجام می‌پذیرد که این عمل باعث ایجاد بافت الاستیکی و خاصیت کش‌آمدن و ذوب‌پذیری نهایی پنیر می‌شود. به‏‌طور کلی در ایران دو نوع پنیرپیتزا تولید می‌شود؛ نوع اول پاستافیلا یا همان موزارلاست که درحقیقت پنیر پیتزای اصلی و نوع دوم پنیر پیتزای پروسس است که چربی و پروتئین به‌کار رفته در آن منشاء لبنی (مانند روغن کره، کازئین و کازئینات) دارد اما در نوع گیاهی آن، منشاء چربی، گیاهی و پروتئین آن لبنی است.

پنیر موزارلا از مهم‌ترین محصولات خانواده پاستافیلا است و منشاء پیدایش آن جنوب ایتالیاست و در زبان ایتالیایی پاستافیلا به پنیرهای نرم و کشدار می‌گویند. وجه تمایز این نوع پنیر با پنیر پروسس در فرایند تولید آن (استفاده از پنیر اولیه یا مخلوط چند نوع پنیر) است. در واقع، پنیر پروسس از مخلوط یک یا چند نوع پنیر مختلف (با درجه‌های رسیدن متفاوت) با پنیر اولیه به عنوان ماده اصلی و افزودن امولوسیون‌کننده مجاز و حرارت دادن مخلوط در شرایط مناسب (هم‌زدن و به دست آمدن مخلوط یکنواخت) تولید می‌شود. گرچه در فرایند تولید هر دو نوع پنیر، شیر گاو به مصرف می‌رسد اما پنیر موزارلا از شیر کامل و پرچرب گاومیش‌ نیز به دست می‌آید به همین دلیل در مقایسه با پنیرهایی که از شیر گاو به دست می‌آیند، کمی چرب‏تر است.

تجربه خود شما چیست؟

آینه، مشابه یکدیگر است. ما هر کدام یک طرف آینه را داریم و حافظ مى‏گوید: «در پس آینه طوطى صفتم داشته‏اند». در پس آینه، تجربه‏هاى معنوى انسان‏ها مشابه یکدیگر است. به عبارت دیگر این صورت‏هاى متکثر، مثال واحدى در آن بالا دارند. در آن‏جا زبانى هست که این‏ها را شبیه یکدیگر مى‏سازد، زبانى خیلى قدیمى که به اولین تجربه انسان بر مى‏گردد و بعد فرهنگ‏ها آمدند و آن‏ها را زیر قانون پوشاندند. ولى وقتى به عمق مسایل مى‏رویم تشابه زیادى هست. مخصوصا به نظر من عرفان نظرى اسلامى خیلى غنى است. نمى‏دانم عرب‏ها این‏قدر غنى هستند یا خیر. چون عرب‏ها شاعرانى مثل حافظ و مولوى ندارند; تنها ابن فارض را دارند. ولى زبان فارسى سرشار از این اشعار است، به طورى که هر ایرانى، که حتى اعتقادى هم ندارد، خودش را درویش مى‏داند، چون چند تا شعر مى‏داند. مفاهیمى چون شمع و پروانه و گل و مغ‏بچه و دیر مغان و... این قدر در ذهن ما قوى است و این‏قدر بار عاطفى دارد که به محض این‏که شعر مى‏گوییم همه عارف مى‏شوند.

این روش شما خیلى جالب است که اگر مى‏خواهیم دین را بشناسیم نخست آن مثالش را بشناسیم و بعد ببینیم در دین دیگر چگونه است. اما به هر حال اگر به عنوان کار علمى نگاه کنیم، نمى‏توانیم مطالعات ادیان را در بعد عرفانى آن محدود کنیم. اگر بخواهیم در صورت‏هاى دیگر ادیان کار کنیم چه باید بکنیم؟ اگر بخواهیم مثلا کلام ادیان یا اخلاق دینى را بررسى کنیم چه ملاک‏هاى فرادینى‏اى براى این مطالعات وجود دارد؟

اولا باید ساختار و مؤلفه‏هاى اساسى و سرنوشت‏ساز ادیان را بشناسید; مثلا باید ببینید که ساختار اصلى مسیحیت و ارتباطش با گوشتمند شدن و تجسد مسیح چیست. مسئله مهم دیگر در مسیحیت، مسئله تاریخ است که در اسلام نیست; چون در اسلام اگر تاریخ دارید، تاریخ نبوت است و بعد هم غیبت. در غرب تاریخ مهم است. از نقطه‏اى که مسیح در زمان مى‏آید و به قول معروف گوشتمند مى‏شود، این نقطه عطف تاریخ است و از این به بعد تاریخ براى سیحیت‏شروع مى‏شود. هنگامى که اولین مسیونرهاى بلژیکى، در قرن 16 و 17، به چین رفتند، سعى مى‏کردند چینى‏ها را مسیحى کنند; ولى آن‏ها زیربار این حرف‏ها نمى‏رفتند و اولین چیزى که مى‏گفتند این بود که چرا این خداى شما این‏قدر جوان است؟ دو هزار سال چیست؟ و بعد این چه خدایى است که به این روز افتاد و نتوانست از خودش دفاع کند؟ چینى نمى‏فهمد که این چه خدایى است که مصلوب شده است و هیچ‏کارى نتوانسته انجام بدهد. در اسلام شریعت اهمیت زیادى دارد، ولى مسیحیت‏شریعت و کلام الهى منزل ندارد.
